E101 Riboflavine, Riboflavine-5'-phosphate sodium

E101 Riboflavine, Riboflavine-5'-phosphate sodiumRiboflavin refers to vitamin B2, a coloured water-soluble vitamin, which is used for this reason as a yellow food colouring in various foods. Naturally present in milk and milk products, eggs or meat, its use as an additive is permitted in various foodstuffs. Its commercial form can be synthetic. The codes E101(i) or E101(ii), which can be found on some labels, refer respectively to riboflavin and riboflavin-5'-phosphate sodium obtained by synthesis. The E101 code without more precision can take one or the other of these forms. Once metabolized, the additive behaves like natural vitamin B2 and therefore contributes to increase the current intake. To date, there is no suspicion of adverse effects even at high doses of consumption.
