Lactic acid is used in the food industry for its properties of antioxidant, acidifier or flavor enhancer. It acts as a bacteriostatic agent, i.e. it prevents the multiplication of bacteria (especially pathogenic bacteria such as salmonella or listeria) without killing them. It is naturally present in many foods.
