E315 Acide érithorbique, Acide isoascorbiqueIsoascorbic acid is one of the 4 isomeric forms of ascorbic acid (E300), and can be produced biologically by the action of certain bacteria on carbohydrate substrates. This additive is notably used to preserve the color and taste of meat products and certain frozen fish. Its use does not seem to present any risk.
