Microcrystalline cellulose is a texture agent. It provides a round mouth feel without providing calories. It is therefore often used as a bulking agent in calorie-reduced foods such as salad dressings or desserts. It is also used as a binder or stabilizer in various sauces. This additive is considered not to be of concern.
