E476 Polyricinoléate de polyglycérol, Esters polyglycériques de l'acide ricinoléique interesterifiéPolyglycerol polyricinoleate is an emulsifier used, in particular, to stabilize water-in-oil emulsions. It can be used in the manufacture of chocolate to make the mass fluid and homogeneous. This additive is derived from castor oil. Few studies seem to have been taken into account concerning the toxicity of ricinoleic acid (intense purgative and laxative properties, alterations of the intestinal mucous membrane and losses of water and electrolytes). E476 has a priori the same surfactant properties as other emulsifiers of the same family, with associated risks in terms of increasing the permeability of the intestinal barrier and promoting chronic inflammatory bowel diseases. This additive can also disturb the balance of the intestinal flora, leading to various health problems of an autoimmune nature. The resulting chronic intestinal inflammation could finally promote the development of colon cancer. In view of these various points, it may seem surprising that the European Food Safety Authority (Efsa) increased the Acceptable Daily Intake (ADI) of this additive during its last re-evaluation.
