E509 Chlorure de calciumCalcium chloride is used as a firming agent, flavour enhancer and stabilizer. For example, it is used to preserve the shape of fruit and vegetables used in compotes or preserves. It acts as a dressing on damaged plant cells of cut or peeled fruits and vegetables, preventing their deterioration or discoloration. No adverse effects related to the use of this additive have been reported. Compared to the intakes from the traditional diet, those resulting from the consumption of additives are negligible.
