Inosinic acid (E630) and its salts, inosinates (E631-633), are taste enhancers. They help to bring out the umami (the famous 5th Asian flavour). 10 times more powerful than glutamates (E620-625), they are frequently combined to increase their effectiveness. Inosinic acid and inosinates are degraded to uric acid. Increasing the concentration of uric acid in the blood could lead to a gout attack in susceptible individuals. However, it seems that the quantities ingested due to the use of inosinic acid as a food additive are negligible compared to those from the general diet.
